Rosemary Coconut Sweet Potatoes

These have been my go to for a long time. I try to avoid processed carbs, so I sub sweet potato for alot of my meals, especially post workout meals (breakfast/ dinners). These are easy to throw on the stove top while you are cooking, or to prep for buddha bowls. I tend to use these for alot of my meals so I end up throwing them in the oven, but these stove top ones are my favorites.
